Butterflied Minute Roast

This is my favorite choice of roast for serving a stuffed roast. This crowd pleasing dish always hits the spot with the savory mushroom and spinach farfel. You may want to practise using butcher twine with a rolled newspaper before graduating to the roast.

Ingredients

4 lbs Butterflied Minute Roast
2 tbsp Dijon mustard
1 tsp Onion soup mix
1 tsp Marjoram
2 tsp Olive oil + 1 tsp
3 Bay leaves
2 Cloves garlic chopped
1 cup Farfel
4 cups Sliced mushrooms
2 cups Chicken stock
1.5 cups Water
1 cup White wine
2 cups Fresh spinach or 1/2 cup frozen strained spinach
Salt and pepper to taste

Preparation

Heat olive oil in small pot with a tight fitting lid.  Before the oil starts to smoke, add onions and sauté until translucent - about 4 minutes.  Add garlic and cook another minute.  Add mushrooms and sauté approx 4 minutes.  Stir in the spinach until wilted, approximately 2 minutes.  Add farfel and onion soup mix and mix well.  Add water, bring to boil and reduce to simmer for 15 minutes. 
 
Once farfel is fully cooked, transfer to large plate and spread to allow quick cooling.  
 
Take your butterflied minute roast and open it on your cutting board ready to stuff and roll.  Spread the Dijon onto the flattened roast.  Apply the stuffing into the center of the meat as if you were putting something inside a sushi roll.  Roll the meat closed and tie it with twine every 2 inches.  Tie well at the ends to avoid stuffing from slipping out during cooking. 
 
Preheat oven to 450 degrees and season the rolled/stuffed roast with salt, pepper and marjoram.  Massage the roast with the additional 1 tsp olive oil.
 
Place in oven for 15 minutes to brown.  Remove from oven and add wine, stock and  bay leaves.  Cover with foil and return to oven for 2 hours at 350.  Using a tong and large spatula, remove roast and allow to cool overnight in fridge before removing string and slicing.  Arrange sliced stuffed roast on reheatable platter and pour over juices.  Cover and reheat for 20 minutes prior serving.
